The edible insect industry in South Korea is gaining attention as a sustainable protein source, with over 2,500 farms engaged in production. Ten species, including mealworms, crickets, and silkworm pupae, are officially approved for consumption. These insects offer high nutritional value and bioactive properties, making them suitable for functional foods and animal feed. Despite governmental support and corporate interest, challenges persist, such as limited consumer acceptance, insufficient research, and scalability issues. Addressing these obstacles is crucial for the industry growth and integration into mainstream food systems.
